Effect of roasting on the aflatoxin contents of Nigerian peanut seeds
ثبت نشده
چکیده
Peanut seeds were prepared with variations in roasting conditions. Positive correlations were obtained between loss of aflatoxins in the products and the roasting conditions. Seeds dryroasted at 140C for 40 min resulted in 58.8% and 64.5% reductions in AFB1 and AFG1, those roasted at 150C for 25 minutes resulted in 68.5% and 73.3% reductions in AFB1 and AFG1, respectively. Roasting at150C for 30mins led to 70.0% and 79.8% reductions in AFB1 and AFG1 respectively.

Effect of Roasting Process on Total Phenolic Compounds and γ-tocopherol Contents of Iranian Sesame Seeds (Sesamum indicum)
Sesame (Sesamum indicum L.) seed and oil have long been used widely as healthy foods to supply energy and prevent aging. Some of the main active anti-oxidative constituents in sesame seeds are γ-tocopherol and phenols. The purpose of this study was to investigate the relationship between roasting temperature and time with γ-tocopherol and total phenolic compounds (TPC) of sesame seeds when roas...
متن کاملEfficacy of Ozone to Reduce Fungal Spoilage and Aflatoxin Contamination in Peanuts
Peanuts (Arachis hypogea L.) are important substrates for the growth and subsequent aflatoxin production by different members of Aspergillus. The aims of the current study were to identify the toxigenic fungi associated with peanut and to study the effect of ozone gaseous (O3) on fungal spoilage and aflatoxin concentration in peanuts. Peanut samples were collected from three Egyptian governorat...
متن کاملEffect of Heat Treatments on Certain Antinutrients and in vitro Protein Digestibility of Peanut and Sesame Seeds
The effect of heat treatments (boiling, autoclaving, microwave cooking and roasting) on the levels of certain antinutritional factors (phytic acid, trypsin inhibitor, α-amylase inhibitor, lectin activity and tannins) and in vitro protein digestibility (IVPD) of peanut and sesame seeds were investigated. All heat treatments significantly reduced the levels of all the investigated antinutrients a...
